Producer: Jakob Glatz | Conservas Pinhais
Where it's from: Matosinhos, Portugal
Why it’s unique: Currently, Pinhais is one of the only canning companies that remains faithful to the traditional methods of canning and is committed to carrying through 37 individual steps required to produce each can solely by hand. By minimizing the use of industrial machinery in favor of manual labor, the company is reducing emissions and energy consumption for a greener footprint. Plus, they maintain that their employees can even carry out the steps blindfolded. Pinhais proudly employs generations of women in its canning facility, grandmothers, mothers, and daughters, who have perfected the craft over several decades. They even have a secret tomato sauce recipe that is known by just a few staff members and is passed down verbally!
